Wine produced exclusively from Vernaccia grapes coming from the same clone found inside a local vineyard.
Slow and soft pressing is preceded by a 48-hours cold maceration.
After a start of alcoholic fermentation in steel follows mainly a residual and malolactic fermentation in barriques with the consequential wood refinement while the rest maintains the refinement on lees with weekly pumping-over and bâtonnages.
Once bottled is bottle-refined for at least 3 months.
