Gobbio is the name of a hill in the centre of the Botticino amphitheatre of hills, about 400 metres above sea level. Unlike on the other hills, the famous “Botticino Classico” marble is not quarried here, since the stone crumbles making it unusable. The distinctive, unique terrain is rich in marl (limestone and clay), calcium carbonate, silt and sand. It is central to the personality of this wine, which is made from Barbera (35%), Sangiovese (35%), Marzemino (20%) and Schiava Gentile (10%) grapes.
Colle degli Ulivi ferments in large concrete vats, with pigéage and rémontage carried out during maceration. Ageing also takes place in concrete casks to maintain this wine’s freshness, and lasts about 20 months. The grapes come from their vineyard high in the Botticino municipality hills, at an altitude of 350 metres. The terrain is a marly limestone, with a very high lime percentage, due to the marble of which those hills are made. The grapes are harvested by hand in early October and immediately destemmed.
Noventa Botticino wines are not filtered, so that all their characteristics are kept intact; any sediment which may form is merely a sign that this is truly a genuine product.
Through this process, we have achieved a Botticino with a bright ruby red colour, ideal with roast meat or red meat dishes in general, suitable for drinking over a period of five or more years.

Noventa
The Noventa family vineyards are situated on three different Botticino hills with different geological origins, although they all have an extremely high percentage of lime, which helps to give the wines their distinctive elegance. Noventa produces three “crus”, one for each hill, which also derive some of their character from the different ages of the vineyards themselves.
