Vinification: careful evaluation of the harvest period; careful selection of grapes both on the plant and in the cellar, with particular attention to exposure to the sun and the integrity of the bunches brought to the manual sorting. Temperature control, squeezing of the whole cluster, short static cold decanting of the must followed by spontaneous fermentation with indigenous yeasts.
Organoleptic characteristics: straw yellow with strong golden reflections and excellent brilliance. The smell is fine and very intense, elegant in the recognition of fruity, floral and spicy notes. The flavour is wide, round and soft, decidedly warm with long persistence and slightly mineral finish. It’s a sumptuous wine, engaging: exceptional as a meditation wine.
