Cultivar delle Volte

Bignotti cellars were created for the willing to rediscover the wine tradition of Valcamonica. The winery was established in 1997, when Bignotti’s family decided to start to cultivate the tiny vineyard of the paternal grandfather, who had always run it and had produced wine from the grapes in the traditional 15thcentury-cellars located in via Monte Grappa.

ABOUT THE VINEYARD

Cellar

The Bignotti family cellars are two leveled cellars and they permit the so-called “A caduta” winemaking technique: at the arrival of the grapes there is a selection of the bunches and grapes are removed from the stalks. Then, red wines undergo the pressing phase, while for white wines there is a softer pressing.

Valcamonica

In the village of Piancogno along the old road "delle Volte" which links the village to its suburb called "Annunciata", the two plots of land which give birth to their wines extend, "Delle Volte" and "Conca del Fenocolo".

The vineyard “Delle Volte” is the original vineyard from which all the project has started and it is located alongside the historical cellars of the 15th century, where the refinement of all "Cultivar delle volte" wines still take place.

Winemaking technique

When the first phase of fermentation has finished, the temperature is checked and after that, the wine is sent, by leaving falling down, to the underground cellar in which the fermentation goes on. It is then refined in steel or oak barrels and finally bottled.

The sparkling wines are instead produced with a more classical method, the removal of stalks is handmade inside the underground cellar.
