Harvested manually in small boxes, the grapes are just destammed but not crashed. Each variety fermented separately at 27 C° and the maceration lasts at least 25/30 days.
Alcoholic fermentation and MLF takes place in cement vat and the aging is in french oak barrel (225 lt.) for 10/12 months
Then, a pre-refining in cement vat precedes the bottling, without filtration.
The colour is deep ruby. Intense and harmonious bouquet of red fruits and blackberries, spicy notes of black pepper, cloves and flint. At the tasting have a good complexity, structure and persistence. Fine and elegant tannins, with freshness and balance.
