The grapes are harvest by hand in small baskets (20 kg each) and chilled overnight to 10°C in order to preserve the aromas. The following day the grapes are pressed and undergo a short maceration to achieve the typical onion skin hue.
The free-run juice is then fermented in temperature controlled stainless steel vats and remains on lees for four months until bottling.
The bouquet is delicate with notes of pomegranate, peach and apricot. On the palate the wine is full and rich with a pleasant refreshing finish.

Conte Vistarino
Carlo Giorgi di Vistarino introduced the pinot nero grape to the Oltrepo Pavese between the end of the 19th century and the beginning of the 20th century, going on to win awards in both London and Paris for the sparkling wines thus produced. His work was taken further by Ottaviano and Carlo, and is today in the hands of Ottavia Giorgi di Vistarino.
