Colli Asolani Prosecco o Asolo Prosecco DOCG
A pure gem in the Prosecco area, Asolo hill is located in the Province of Treviso. The vineyards (Glera min 85%) are placed at an altitude ranging from 100 to 450 meters above sea level. The climatic peculiarity of this territory allows mild springs, not too hot summers and autumns again mild thanks to the favorable exposure to the south of the vineyards and the conformation of the reliefs.
The tradition that wanted the wine produced with the “ancestral method” of the natural fermentation in spring in the bottle of the sugar residue not carried out in autumn (Col Fondo), has given way in the great productions to sparkling wine in autoclave according to the Martinotti method (what we call today Prosecco).
Asolo Prosecco DOCG is a dry wine, with features of elegance, lightness, slenderness and a delicate scent among fruity, floral and a light vegetable note, citrus notes (lemon, cedar), fine and delicate honey and hints of ripe apple and white flowers. On the palate it is soft, delicate, fresh and harmonious, with a dry aftertaste.
